Green banana bread with a superfood kick

Bread making is something I admire very deeply - it requires a lot of understanding and knowledge of your ingredients, how they behave and how they react together as well as patience and respect (you can’t just beat the dough with a wooden spoon like there’s no tomorrow!). On the weekends I enjoy baking the occasional loaf here and there and this weekend was in the name of one very green (and kinda poop looking - but delicious, promise!) loaf. Here’s a recipe for a very green and energizing banana bread.

What will you need?
✓ 3 ripe bananas
✓ 4 eggs
✓ 100g ground almonds
✓ 50g hemp protein
✓ 50g ground oats
✓ 1tsp cinnamon
✓ 1 ½ tsp baking powder
✓ 4 sachets of VITL Greens powder (read on to find out what the alternatives for this are)

Mash the ripe bananas with a fork and add 4 beaten eggs. Mix all your ‘dry’ ingredients together and add into your banana/egg mash. Work your way into a smooth-ish dough. It will have chunks of banana in it and a strange green colour but don’t give up, this is what we are going for! Once you get the kinda smooth texture, pour the mixture into a baking tin lined with baking paper. Bake at 180 degrees for about 45 minutes. 

Now, there’s a lot of going on in this recipe. You don’t necessarily need to add hemp protein in the dough, it’s perfectly fine to add any powder protein you have on hand. You also don’t need to add the VITL Greens powder unless you want this banana bread to have the super energy kick to it. If you don’t have VITL Greens then simply add some macha powder or spirulina powder or any superfood powder you have on hand. And tadaaah your green banana bread is ready! 

The bread itself is delicious (chef’s tip: serve it with some raspberry jam, mmm) and since it’s so high in protein and all things muscle building it is perfect as a post workout treat.
